Vinh Long works well for local workshops and Khmer cultural stops. Hau Giang adds forest waterways without going as far as Chau Doc.
An Giang needs more travel time. If Tra Su, Chau Doc or the floating season matters to you, give that part of the trip its own day rather than squeezing it between Can Tho activities.

Consider staying longer rather than treating the western Mekong Delta as a quick side trip.
The floating-season landscape is more closely associated with places such as An Giang than with every destination across the entire Mekong Delta. Keeping that distinction clear will also help you choose a tour for the right reason.
